2013

This year we are adding pork, beef, Cornish hens and game birds to our livestock.  Beef and pork will be available at the end of April.

Pork
We are raising heritage breed pigs this year.  Right now, we are planning on a run of Tamworths. We're looking for Ossabaws and Ossabaw mixes.  The pigs are raised on pasture and in the woods with access to acorns.  We supplement with non-GMO feed.  We can provide whole cut hogs, halves or quarters.

Beef
We have been patiently waiting for our grass fed steers to come to weight and they are now ready to be butchered.  We do not finish our cattle on grain but if you are interested in grain-finished beef, we can discuss non-GMO feed.

Pasture-Raised Poultry
We raise pasture-fed poultry.  Usually we purchase day old Cornish Cross chicks and raise them for 45 days before processing them.  For as long as it is cost effective, we use a USDA inspected processor. We can process on farm if you prefer.  From time to time, we also raise heavy meat cockerels.  These birds have a different body shape than the chicken you are used to purchasing but tend to have a stronger, richer flavor and are great for hearty stocks as well as meat.

Cornish Hens
Small, tasty and easily arranged for beautiful plating.  Our Cornish hens are raised on pasture and supplemented with non-GMO feed.


Pasture-Raised Rabbit
Our rabbits live in portable pasture pens that are moved to fresh grass daily.  Fryers usually come to weight at 12 weeks. Our rabbits average 3lbs dressed.

Game Birds
This year, we will raise quail and pheasant on a request basis.  If you have an event or want to run a special, we can grow these birds for you in the quantity you need.  We will not keep these on hand in the freezer but we're happy to grow them for your needs.  Contact us with your required dates and we'll provide you with a timeline and pricing.
